Welcome to NuVu’s Future Food Lab. This is where food, design, technology, and traditional methods come together to solve the world’s biggest food and health-related challenges.

By 2050, the world’s population is expected to reach 9.8 billion. In order to sustain this increased population and deter detrimental impact on our planet's ability to feed this population, we need to change the way we eat and the way we produce food today. The huge changes needed can begin at the top with large-scale government-directed interventions, but they will also need to be fed from the bottom, starting at the scale of the individual. In this studio, we’ll look at the latest innovations and trends in the food economy, and design future food inventions and products that can be used at the individual scale to transform our food culture.

What kind of products and experiences can we create to adapt our food habits at the personal scale? How can we design food products that improve our health while also minimizing our impact on the environment? As part of the studio, we’ll meet some of the leading innovative food companies and restaurants in Boston, and see how they are using food customization, 3D food printing, indoor farming, edible and biodegradable packaging, food computers, and real-time biometrics as ways to tailor an individual food experience. We’ll also look at upcycling of food and agriculture waste into products for food production. Using the combined power of digital design (computer aided drafting, 3D modeling) and rapid prototyping tools (laser cutters, 3D printers, CNC milling), students will prototype future food products for the Market of the Future.
